Summer High Protein Orzo
Ingredients
SERVES: 6-8
½ cup arugula
1 box orzo
8 cups water
1 package of sundried tomato & basil chicken sausage
2 bell peppers
1 ½ cups spinach
3 tbsp olive oil
1 tsp minced garlic
1 lemon
¼ cup parmesan cheese
Garlic salt
Black pepper
Instructions
Cook orzo on stovetop per box instructions
As that is cooking, chop your bell pepper into small pieces and chop your chicken sausage into bite sized pieces
Once orzo is cooked al dente, mix in spinach and chopped bell peppers
In a separate pan, cook chicken sausage all the way through
Add in chicken sausage to orzo and veggies and combine
Top bowl with olive oil, juice from one fresh lemon, minced garlic, parmesan cheese, and spices
When serving, add arugula to base of bowl and scoop about 1 cup of orzo mix on top
