Summer High Protein Orzo

Ingredients

SERVES: 6-8

  • ½ cup arugula 

  • 1 box orzo

  • 8 cups water

  • 1 package of sundried tomato & basil chicken sausage

  • 2 bell peppers

  • 1 ½ cups spinach

  • 3 tbsp olive oil

  • 1 tsp minced garlic

  • 1 lemon

  • ¼ cup parmesan cheese

  • Garlic salt

  • Black pepper

Instructions

  • Cook orzo on stovetop per box instructions

  • As that is cooking, chop your bell pepper into small pieces and chop your chicken sausage into bite sized pieces

  • Once orzo is cooked al dente, mix in spinach and chopped bell peppers

  • In a separate pan, cook chicken sausage all the way through

  • Add in chicken sausage to orzo and veggies and combine

  • Top bowl with olive oil, juice from one fresh lemon, minced garlic, parmesan cheese, and spices

  • When serving, add arugula to base of bowl and scoop about 1 cup of orzo mix on top
