Lemon & Herb Couscous

Ingredients

SERVES: 1

{Lemon & Herb Couscous}

  • 1 box couscous

  • 4 scallions

  • 1/4 cup freshly chopped dill

  • 1/4 cup freshly chopped parsley

  • 1/2 large cucumber, diced

  • 1/4 cup crumbled feta cheese

{Dressing}

  • 1/4 cup extra virgin olive oil

  • juice from 1 lemon

  • 1 large tbsp dijon mustard

  • 2 tbsp honey

  • Salt & pepper to taste

 

Instructions

  • Begin by cooking couscous on the stovetop per box instructions

  • Chop up all the ingredients needed for the lemon & herb couscous

  • Combine cooked couscous with remaining ingredients and mix well

  • To a small cup, combine ingredients for lemon & honey dressing and mix

  • Pour dressing over the top of the lemon & herb couscous and enjoy!

I personally love this as a side dish to freshly cooked steak or grilled chicken!
