Grilled Chicken Nourish Bowl
Ingredients
SERVES: 1
Base of spring mix (or any lettuce you have)
Cucumber coins
1/3 cup chickpeas
Grilled chicken
1/2 fresh avocado
1 tbsp fresh dill
1/2 tbsp hemp seeds
Juice from 1 lemon
Drizzle of olive oil
Salt & pepper
Instructions
Start by grilling chicken — I use the Soyaki marinade found at Trader Joe’s
Once chicken is grilled, assemble bowl — start by adding a base of lettuce & then add remaining ingredients on top to build a nice and balanced nourish bowl
For dressing, squeeze lemon juice + extra virgin olive oil + salt & pepper
