Grilled Chicken Nourish Bowl

Ingredients

SERVES: 1

  • Base of spring mix (or any lettuce you have)

  • Cucumber coins

  • 1/3 cup chickpeas

  • Grilled chicken

  • 1/2 fresh avocado

  • 1 tbsp fresh dill

  • 1/2 tbsp hemp seeds

  • Juice from 1 lemon

  • Drizzle of olive oil

  • Salt & pepper

 

Instructions

  • Start by grilling chicken — I use the Soyaki marinade found at Trader Joe’s

  • Once chicken is grilled, assemble bowl — start by adding a base of lettuce & then add remaining ingredients on top to build a nice and balanced nourish bowl

  • For dressing, squeeze lemon juice + extra virgin olive oil + salt & pepper

  • Enjoy!
