High Protein Pesto & Avocado Toast

Ingredients

SERVES: 1

  • 1 slice of The Avocado Bread Company seeded bread

  • 1/2 cup cottage cheese

  • 1/2 fresh avocado

  • 2 boiled eggs

  • 1.5 tbsp Trader Joe’s vegan kale pesto

  • Salt & pepper to taste

 

Instructions

  • Toast one slice of bread

  • Boil eggs

    • Bring 2 cups water to a boil

    • Once the water is boiling, add both egg & boil them for 10 minutes

    • Remove the eggs & immediately place them in a bowl of ice water for 7 minutes to cool

    • Once cooled, crack them open

  • To a small bowl, combine 1/2 cup cottage cheese with 1/2 avocado & mix well

  • Spread this high protein mixture onto your toasted bread, slice open your cooked eggs and layer them on top, add vegan kale pesto, salt and pepper & enjoy!
