Healthy Chipotle Shrimp Tacos

Ingredients

SERVES: 1

{shrimp tacos}

  • 3 @mariaandricardos CarbBueno whole wheat tortillas

  • 3/4 cup white rice

  • 6 small roasted shrimp

  • 6 tbsp homemade guacamole

  • 3 tbsp red onion

  • Cilantro, to taste

  • Fresh lime juice & flaky sea salt to taste

{Simple Chipotle Dupe — homemade guacamole}:

  • 3 avocados, the riper the better

  • 1/2 purple onion finely chopped

  • 3 tbsp finely chopped cilantro

  • 2 roma tomatoes

  • 1 lime, juiced

  • 1 tsp salt

  • 1/2 tsp garlic powder

 

Instructions

  • Add 1 cup of white rice to a rice cooker & prepare

  • Sauté shrimp on stovetop for ~10 minutes

  • In a large mixing bowl, combine all ingredients to make homemade guacamole

  • Set aside & begin preparing tacos

  • Lightly sauté 3 tortillas on the stovetop over medium heat for 3 minutes on each side

  • Layer white rice, roasted shrimp & homemade guacamole into tortillas

  • Wrap & enjoy!
