Healthy Chipotle Shrimp Tacos
Ingredients
SERVES: 1
{shrimp tacos}
3 @mariaandricardos CarbBueno whole wheat tortillas
3/4 cup white rice
6 small roasted shrimp
6 tbsp homemade guacamole
3 tbsp red onion
Cilantro, to taste
Fresh lime juice & flaky sea salt to taste
{Simple Chipotle Dupe — homemade guacamole}:
3 avocados, the riper the better
1/2 purple onion finely chopped
3 tbsp finely chopped cilantro
2 roma tomatoes
1 lime, juiced
1 tsp salt
1/2 tsp garlic powder
Instructions
Add 1 cup of white rice to a rice cooker & prepare
Sauté shrimp on stovetop for ~10 minutes
In a large mixing bowl, combine all ingredients to make homemade guacamole
Set aside & begin preparing tacos
Lightly sauté 3 tortillas on the stovetop over medium heat for 3 minutes on each side
Layer white rice, roasted shrimp & homemade guacamole into tortillas
Wrap & enjoy!
