Protein & Fiber Pasta Dinner

Ingredients

SERVES: 4

  • 1 bag rigatoni pasta (any pasta shape will work)

  • 2 large heirloom tomatoes

  • 1 bag frozen peas

  • 12 oz grilled chicken

  • 5 jalepeño chicken sausage links

  • 2 tbsp avocado oil

  • 3 tbsp extra virgin olive oil

  • 2 tbsp Trader Joe’s soyaki marinade

  • juice from 1 lemon

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp crushed red pepper

  • 1 tsp garlic powder

 

Instructions

  • Start by slicing up both tomatoes into large chunks

  • On a small pan, add 1 tbsp of avocado oil and saute tomatoes until roasted

  • While tomatoes are roasting, bring one pot of water to a boil and cook pasta al dente

  • In a separate larger pan, add 2 tbsp of soyaki marinade. Add grilled chicken to pan and grill until minimum internal temperature of 165F

  • Let tomatoes, chicken, and pasta cook

  • While those are cooking, add frozen peas to a bowl with warm water and steam in the microwave for ~2 minutes

  • Cut up chicken sausage into little coins and add to the pot with the roasted tomatoes so all of the flavors mix together

  • One all ingredients are done cooking, combine them in one big bowl

  • Add in your extra virgin olive oil, fresh lemon juice, salt, black pepper, crushed red pepper, garlic powder and mix well

  • Serve warm & enjoy – I like to add some Parmesan cheese to finish it off, but completely optional!
