Mediterranean Chickpea Salad

Ingredients

SERVES: 1

  • 3/4 cup chickpeas

  • 1/4 cup cucumbers

  • 1/4 cup tomatoes

  • 1/4 cup red onion

  • 3 tbsp Greek yogurt

  • Juice from 1 lemon

  • 2 tsp fresh dill

  • Salt & pepper to taste

  • Whole wheat crackers for dipping

 

Instructions

  • Slice/chop vegetables & herbs

  • Combine all ingredients to a large bowl and mix well (minus whole wheat crackers)

  • Enjoy by the spoonful or use whole wheat crackers for dipping!
