Mediterranean Chickpea Salad
Ingredients
SERVES: 1
3/4 cup chickpeas
1/4 cup cucumbers
1/4 cup tomatoes
1/4 cup red onion
3 tbsp Greek yogurt
Juice from 1 lemon
2 tsp fresh dill
Salt & pepper to taste
Whole wheat crackers for dipping
Instructions
Slice/chop vegetables & herbs
Combine all ingredients to a large bowl and mix well (minus whole wheat crackers)
Enjoy by the spoonful or use whole wheat crackers for dipping!
