Peanut Butter & Chia Jam Oatmeal
Ingredients
SERVES: 1
3/4 cup rolled oats
1 cup water (used for oats)
1 pint raspberries
2 tbsp chia seeds
1/4 cup water (used for raspberry chia jam)
1 tbsp peanut butter
1 tbsp ground flaxseed
1 tsp ceylon cinnamon
2 tbsp Fage 0% milk-fat Greek yogurt
Instructions
Begin by making raspberry chia jam — add raspberries, chia seeds & water to a pot over low-medium heat
Mash the raspberries up and allow to sit until it forms a jelly-like consistency
This makes a larger batch than needed — you can store this in a container to use throughout the week!
While that is cooking, prepare your oatmeal
Combine oats + water and microwave for 1 minute
Stir in cinnamon & ground flaxseeds
Once both the oatmeal & raspberry chia jam are finished, assemble them into a parfait cup with the remaining ingredients and enjoy!
