Peanut Butter & Chia Jam Oatmeal

Ingredients

SERVES: 1

  • 3/4 cup rolled oats

  • 1 cup water (used for oats)

  • 1 pint raspberries

  • 2 tbsp chia seeds

  • 1/4 cup water (used for raspberry chia jam)

  • 1 tbsp peanut butter

  • 1 tbsp ground flaxseed

  • 1 tsp ceylon cinnamon

  • 2 tbsp Fage 0% milk-fat Greek yogurt

 

Instructions

  • Begin by making raspberry chia jam — add raspberries, chia seeds & water to a pot over low-medium heat

    • Mash the raspberries up and allow to sit until it forms a jelly-like consistency

    • This makes a larger batch than needed — you can store this in a container to use throughout the week!

  • While that is cooking, prepare your oatmeal

    • Combine oats + water and microwave for 1 minute

    • Stir in cinnamon & ground flaxseeds

  • Once both the oatmeal & raspberry chia jam are finished, assemble them into a parfait cup with the remaining ingredients and enjoy!
