Apple Cinnamon Banana Bread

Ingredients

SERVES: 12

  • 2 cups all purpose flour

  • 3/4 cup coconut sugar

  • 3/4 tsp baking soda

  • 2 overripe mashed bananas


  • 1/4 cup Greek yogurt

  • 2 large eggs

  • 6 tbsp unsalted melted butter


  • 2 small diced apples (one for inside & one for topping)

  • 1 tsp salt

  • Ground cinnamon, from the heart

 

Instructions

  • Preheat oven to 350F


  • To a large mixing bowl combine dry ingredients

  • Add in wet ingredients (including one of two diced apples)

  • Mix will

  • Spray a 9x5 inch banana bread tin with cooking spray

  • Pour mixture right into pan

  • Add your other diced apple to top with some more cinnamon (optional)

  • Bake on 350F for about 45-50 minutes (or until a toothpick comes out clean)

  • Remove & cool in the pan for about 10 minutes before serving

  • Best served with some melty butter or nut butter
