Asian-Style Salmon Bowl
Ingredients

Arugula
Soba rice noodles
Cucumber coins
Cabbage
Shredded carrots
Honey soy glazed salmon - recipe below
Avocado
Green onion
Peanuts
Homemade Asian peanut dressing - recipe below
Sesame seeds
{Peanut Dressing}
2 tbsp soy sauce
1 tbsp sesame oil
1 large tbsp peanut butter
1 tbsp hot honey
Sprinkle of sesame seeds
{Honey Soy Salmon Glaze}
2 tbsp soy sauce
1 tsp minced garlic
2 tbsp raw honey
Pinch of salt
Instructions
Start by heating 2 tbsp extra virgin olive oil on a large pan over medium heat
While that is heating up, in a small bowl, combine ingredients for the honey soy salmon glaze
Pat salmon dry & spread the honey soy glaze on the skin side of the salmon until the whole skin is covered
Once the olive oil is heated, place seasoned salmon - skin side down - on pan — cook for 4-5 minutes skin-side down and then flip to the other side and cook for 4-5 minutes (8-10 minutes total)
While that is cooking, wash & chop cucumbers, cabbage, green onions and set aside
In a different small bowl combine all the necessary ingredients to make the Asian Peanut Dressing which you will use as the dressing for the finished bowl
In a small pot, bring 3 cups of water to a boil and stir in one package of rice noodles and follow instructions on package to cook
Once everything is done, assemble your bowl with all the listed ingredients, pour your Asian Peanut Dressing over the top and finish with some extra sesame seeds
